ティズギー村のアルガンオイル作り。このモロッコ南部にしか自生しないアルガンの木。この地方に昔から住むベルベル民族伝統のオイル作り。この仕事は主に村の女性たちの仕事。アルガンの種の硬い殻を一つ一つ叩き割り、白い小さな中身を集めて石臼で轢き、液状になったところで熱しながら混ぜ続け、じっくりとオイルを絞り出す。その手間と大変さは、想像以上だった。村の女性たち総出で1日かけて作ったオイルは数リットル。ワイワイと賑やかに、歌いながらオイルを作り出す彼女たちはとても可愛らしく華があり、ウットリじっくり眺めてしまうほどだったけれど、このオイルがどれだけ貴重なものか、よくわかった1日だった。その工程を全て手伝わせていただいたヨメは終始ホントに楽しそうで、村の人々とも一気に打ち解け、素敵な1日だったと思う。ちなみに100%のアルガンオイルをパンにつけて食べるのが、他の何よりも美味しかった。
DAY603 : HOW TO MAKE ARGAN OIL
In Tizgui, people make oil in a Berberian traditional method from argan which is unique to Southern Morocco, mainly by women's hands. Crushing the hard shell of the seeds one by one, grinding the pieces of white core into liquid, warming and stirring it up to squeeze the oil. It was way more complicated and difficult than I expected. Every women in the village spent one whole day singing and working to make just a couple of liters of this rare argan oil. They were so adorable that I couldn't help staring at them. My wife helped through all the process looking very happy and seemed to have a great day getting along with the villagers. By the way, bread with 100% argan oil taste better than anything else.
アルガンオイルのつくりかた
HOW TO MAKE ARGAN OIL
アルガンの実を拾いに、山へ。
Go to the mountains to pick the seeds.
集めた実を、天日に干して乾燥させます。
Dry the fruits under the sun.
実から、種を取り出します。(実の部分はヤギの餌に使用)
Take away the seeds from the fruits. (The shells are for the goats)
石で殻を叩き割り、中身を取り出します。(殻は燃料として使用)
Crack the seeds with the stones and take the inside out. (The shells for fuels)
取り出した中身を煎ります。(コスメ用のアルガンオイルは煎りません)
Roast the inside. (Skip roasting for cosmetic use)
石臼で少しずつ轢いていきます。
Grind it in a millstone.
全て液状になるまでひたすら轢きます。
Keep grinding until it is liquidized.
応援がてら、歌います。
Sing a cheering song.
液状になったら、少量の水と塩を入れ、かき混ぜます。
Add a little water and salt when its liquid and stir it up.
炭火の上で、ひたすらかき混ぜます。
Keep stirring over a fire.

実が固まっていき、オイルが出てきたところで、
When the liquid gets stiff and the oil is separated,
搾って、オイルを集めて
Squeeze the oil out of the rest,
瓶に入れたら、完成です。
Put it into a bottle.
